New cider for Wales
Hallets Real is made using both the traditional fermentation method, plus the addition of juice fermented using a rarely applied method called Keeving.
This produces a sweet rich juice, which is then blended with the traditionally fermented juice from other varieties to produce a unique cider which has its own subtle texture and taste.
Once blended it is matured, then bottled and stored for a minimum of 3 months, which allows a natural conditioning to occur.
Hallets Real Cider is available via Real Beer Box, direct from the farm or via a number of other outlets listed on their website. Alternatively they will be at Blackwood Edwardian Xmas Market this weekend, the 4/5 Dec.

First cider of the year

A visit to Llantrisant today was a bit dissapointing as most of the pubs were shut, however the Crown in nearby Llantwit Fardre was open so a pint of Otley was imbibed there. Behind the Crown is the Gwynt Y Ddraig cider farm so it would have been rude not to have gone and see Bill, Drew, Glyn et al. Naturely a pint of cider was offered to me, the first of the year. The Black Dragon cider is as excellent as ever, loaded with tannins it was a bit of a shock to the system at first but turned out an enjoyable drink in the end. Second cider was the lucious Haymaker, sweet and golden as poured straight from the tank. From the farm I can still see snow on the mountains to the north. Cider is not usually thought of as a winter drink but Welsh craft cider should be!

Fishlock's Wales - Welsh Cider
ITV Wales have been filming a new series of Fishlock's Wales, and where better to start than at Gwynt y Ddraig Cider, to film Welsh cider being made. The series will be broadcast on Thursday nights, starting the 15th October on ITV Wales at 1930 hrs.
Pictured: the apples being loaded into the hopper and being fed into the scratter and belt press.
Below: The belt press
The belt press was made in Germany and provides a continuous crushing process, the apples are washed and sorted before being scrattered (chopped) into small pieces from which the juice is extracted. The juice is then pumped into wooden barrels for fermenting.
The crushed apple pulp is then fed to the cows on the farm, nothing is wasted here! She is really loving, not just sticking her tongue out! The last time I saw cows that happy was in St Mary Street, Cardiff on a Friday night.
Below: Operations Director Bill George explains some of the intricacies of blending different apple varities to produce the perfect cider.
Above: Some of the finished ciders and perries.
For those of you who live in South Wales, Gwynt Y Ddraig Cider is available in Tesco's and selected Spar shops throughout the area, failing that they will be at the Abergavenny Food Festival this weekend and at the Great British Cheese Festival next week. The farm is also open for off sales 10-5.30.

Welsh Cider Festival 2009
Welsh Cider Festival 2009
The Welsh Cider & Perry Festival takes place this weekend at the Clytha Arms, Monmouthshire, on the 23rd, 24th and 25th May (Sat-Mon). The Festival is also home to the Welsh Cider and Perry competition which means an early start for Brew Wales, being on the judging panel. Don't mind the early start, it's the 8% cider matured in a whiskey cask at 1000 am that is the difficult job! Anyway the 40 or so cidermakers in Wales will be entering their sweet, medium, dry and bottled ciders and perries into the competition. Winners should be announced sometime in the afternoon on Saturday. Brew Wales will attempt some live blogging and Tweeting from the festival but the wilds of Monmouthshire are not the ideal place to get a signal on a mobile phone.
The Welsh Cider & Perry Festival is the highpoint of the cidermaking year for the makers of our oldest drink. The makers themselves will be there serving (and drinking!) their produce and are more than willing to talk to customers about their wares. That's if the queue for the bar is not too long!
The cider bar will be in the old coach house, to the rear of the Clytha pub itself. The Clytha Arms is set in its own grounds so there is plenty of parking as well as spacious gardens to enjoy the best ciders and perries of Wales. Expect some excellent food as well with the Clytha Arms producing their own award-winning fayre as well as burgers on the barbecue. Brew Wales did feel that the Venison burgers last year were a little dear!
The Clytha Arms is situated on the B4598 between Abergavenny and Raglan, OS368089, NP7 9BW. The pub is on the Abergavenny to Monmouth bus route but the bus goes via the back of the pub on certain journeys, involving about ½ mile walk from the stop. Oh and the stop probably is not marked so use a map and ask the driver to be dropped off at Pit Clytha. The 1830 journey to Abergavenny leaves from outside the pub so no worries there!

Cidermaking in Monmouthshire
Alex shows us above how to get the apples from the tree - a process known as "Panking".
And of course a suitable tribute must be paid to the goddess of the orcahrd, using cider made from from the harvest last year.
This is to ensure a good crop for next year.
Thanks to Ben Jones from the Kings Arms in Abergavenny for letting us use his orchard for the second year running.

At the International Cider Competion held recently in Hereford, Gwynt Y Ddraig, the Welsh Cider and Perry company walked off with a handful of awards. Their Malvern Hills Perry came second in the perry category against Denis Gwatkin's perry. Lyn Casling joins the board of Gwynt Y Ddraig as non-executive Finance Director. He is also from the Rhondda and is a graduate of the Polytechnic of Wales. He is a Fellow of the Association of Chartered Certified Accountants and a Member of the Compliance Institute. Cider Open Day

Gwynt Opens Doors on Cidermaking.
Wales' largest cidermaker, Gwynt Y Ddraig will be opening their doors to the public over the weekend of the 26th and 27th April for a cider making and tasting weekend. Over the course of the weekend at Llest Farm, Llantwit Fardre, 12 of Gwynt Y Ddraig's award-winning ciders and perries (fermented pear juice) will be available on their bar at Wales' only ciderhouse.
According to Andy and Bill, cider makers at Gwynt Y Ddraig, “This is the third year we have opened our doors to our fans and it's always a popular event with ciderlovers even coming over from England to see how we make our award-winning products. It's also a chance for us to meet our customers and explain the effort that goes into making ciders and perries that have won awards from CAMRA, the Welsh Perry & Cider Society and Taste of Wales”.
As well as cider and perry being available there will also be an apple-pressing demo using the equipment that makes the award-winning Gwynt Y Ddraig ciders and perries. Welsh food will be available at the farm including bread and cheese as well as 100% handmade pork sausages, and beef and Wild Boar burgers from Cegin Crincae. Even homemade cider cakes will be available.
This year will see a number of “single variety” types of cider available at the open day. As the name suggests these are made from only one variety of fruit, often from a single orchard. The most familiar single variety is Kingston Black, which originated in Somerset but has been grown in the Welsh Marches, especially Monmouthshire for well over a century. “We try and source all our fruit from Wales”, continued Bill, “but we can only get three quarters of it from Welsh orchards, the rest comes from Herefordshire and Somerset.”
Other single varieties that will be available at the open day are Strawberry Norman, Brown Snout and Yarlington Mill. Gwynt Y Ddraig will also be showcasing a “Pider” - fermented from both apple and pear fruit.
One cider that cider enthusiasts will be looking forward to is a special 3 year old vintage that has been matured in oak barrels. “It's something special”, says Bill, “We have not tried ageing for this long before but maturing in oak will give this cider a certain flavour and colour that you cannot get normally. We think it's one for the connoisseur”.
As well as the single varieties and the perries, Gwynt Y Ddraig's range of ciders is completed by names such as Dog Dancer, Haymaker, Fiery Fox, Black Dragon, Orchard Gold and Barnstormer. If you are unable to make the open weekend, Gwynt Y Ddraig's products are available throughout Wales at food shows as well as at Tesco, Waitrose and in Brains and Wetherspoons pubs.
